I was making (non-GF) cookies for the non-GF members of my house and, as
usual, felt obliged to make something equally delicious for the GF members
(eight-year-old with Celiac Disease, 10-year-old with autism), only I wanted
to make something speedier than cookies. I remembered an old recipe that my
sisters and I used to make all the time when we were kids--a sort of cross
between a brownie and a crumble. I substituted GF flour, used amaranth
flakes for the oatmeal, and added xanthan gum. They came out GREAT--chewy,
nutty, chocolatey. Very easy and even the non-GF members love them. I
thought I'd send the recipe in.
GF Fudge "Oatmeal" Squares
1/2 cup margarine, + 2 Tablespoons
1 cup brown sugar
1 egg
1 teaspoon vanilla
3/4 cup GF flour (I used Hagman's original blend)
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon xanthan gum
2 cups amaranth flakes (I can't remember where I got these--I ordered them
online a long time ago and they've been in my refrigerator ever since)
6 ounces chocolate chips
1 cup evaporated milk
1/2 cup walnuts (optional--I didn't use them)
Preheat oven to 350. Cream 1/2 cup of margarine and brown sugar together.
Beat in egg and vanilla. Add GF flour, salt, soda, xanthan gum, and amaranth
flakes and mix well (the mixture is crumbly). Set aside 1 cup. Spread the
rest into the bottom of a greased 9X9 pan. Melt chocolate and 2 tablespoons
of margarine together (I did it in the microwave) and stir in the milk, salt,
and nuts, if using. Pour over mixture in the pan and sprinkle the reserved
amaranth mixture on top. Bake for about 40 minutes, until chocolate is set
but not too hard.
