Hi All,
I read in a recent post from Mary in California about using Pamela's brownie
mix to make Ice Cream sandwiches. (Check the archives August 4, 2002,
subject:GF son) I tried them and they were great. They are chocolate cake
waffles. We ate them with butter and sugar and also made icecream
sandwiches.
So then I started thinking about what else we could make in the waffle iron.
I had the Kinnicknick bread and bun mix ( it's a yeast free mix, 2 parts
liquid and 3 parts mix) I made up a 3 cup batch (using milk as the liquid),
added a tablespoon of oil and then made them like waffles. Once they cooled,
they had a nice taste and consistency, kind of crusty on the outside and
soft on the inside. I made a peanut butter and jelly sandwich with it and it
was
great. My 11 y.o. Celiac son liked it a lot.
Anybody have any other ideas for the waffle iron?
