When I was first diagnosed with gluten intolerance, I thought that meant
that I could eat any GF food I wanted and be healthy.  I thought that
gluten was the ROOT of all my problems.  WRONG!  That's what I call the
GF MYTH.  I got initially better on the gluten free, dairy free diet, but
when I began experimenting with GF baking, I got sicker & sicker.  WHY?
Because I believe GF baked goods are JUNK!  Xanthan gum, guar gum, corn
starch, rice flour, tapioca starch, potato starch, egg replacer, etc. are
not good for the gut because they are devoid of fiber & nutrition,
difficult to digest and high in empty calories that provide fodder for
yeast & other intestinal pathogens.  The only thing that works for me is
grain free, starch free, sugar free diet.  I'm only thriving now because
my diet is composed of fresh meats, vegetables & fruits.  It only takes a
few little starchy cheats & I'm miserable again.  ~Valerie in Tacoma, WA
