The mechanism, I believe, is that allergens in foods or foods to which you
are intolerant trigger an autoimmune response.
This is the basic premise of the Paleo diet -- that you shouldn't eat foods
to which your body isn't adapted.
The elimination diet takes this one step beyond the other Paleo diet plans.
Neanderthin basically says "those foods that have only been available for
X,000 years shouldn't be eaten".
The elimination diet is a mechanism whereby you can find out which foods
are a problem for your body rather than for the human race, on average.
