I bought some flax oil in capsules once, against my better judgement,
and it was very rancid (smelly).  It also had dating that suggested it
was good for a couple of years.  I was glad I had tasted the
refrigerated, bottled flax oil, because I had something to compare it
to.  I find the fresh oil quite pleasant tasting.
