I've contacted Joyva halvah co and am waiting for their reply as to the
gf stutus of their goodies. Will let you know when I get their reply.
In the meantime, I research home-made halvah recipes and came up with
two. Interestingly, the Israeli [Jewish] version of this Middle Eastern
treat contains wheat, farina or semolina...all definitely not gf. The
Arab versions appeared to be gf..at least the recipes were.
Halvah
1 15oz can Tahini [sesame paste available in Middle Eastern and Health
Food stores]
2 egg whites, stiffy beaten [note for safety sake, use JUST WHITES]
1 cup chopped nuts...unsalted pistachios, walnuts or
syrup
2 cups sugar
1 cup water
2 teas gf vanilla
Boil water and sugar over low to medium heat in a heavy saucepan until
thick...15 to 20 min. Cool slightly and add vanilla.
With an eletric mixer, beat tahini and until smooth and creamy.
Gently fold in egg whites. Misture will pull away from sides of bowl.
Slowly add 3/4 cup syrup. Fold in nuts, then stir in remaining syrup, a
little at a time.
Transfer to a loaf pan lined with plastic wrap. Cover and refrigerate
for 3 days before unmolding.
The other recipe if from Zeke's New Age Halvah
2 cups brown sesame seeds
1/2 cup flax seeds
4T honey
4T sesame oil [raw or toasted]
1/2 chopped nuts..walnuts, pistachios, hazelnuts etc
Grind seeds in clean coffee mill, 1/4 cup at at time. Pour into medium
bowl and add remaining ingredients. Mix well. Place in plastic
container lined with wax paper. smooth. cover and store in frig.
