I've been wanting to share this with the group for a while. Glutano makes a
Ginger Cookie that is just perfect for cheesecake crust. I crumble them and
put them in the bottom of the baking pan. No need for butter or other
ingredients. The ginger flavor adds a nice contrast to the sweetness of the
cheescake. I can get the cookies from a Wild by Nature supermarket near me.
I'm sure they can be ordered as well.
