Well, the good news is that there seems to be at least one product that I
don't have to be paranoid about!  Most people wrote that they have had no
problems with  any olive oil, particulary 100% extra virgin olive oil -
thanks to the person who explained the processing to me - now I understand
what the "extra virgin" means - it is a first pressing of the olives with no
chemicals or additives.  The best response was from a list mate in Italy who
succinctly stated,  "All olive oils produced in Italy are gluten free
according to the law."  That works for me!
