I can think of a few reasons:
1. Red meat really may be a risk factor for colon cancer
2. People who have eaten a lot of red meat during this second half of this
century were wealthier people who also had the money and desire for the
white flour-hydrogenated fat-sugar foods (cakes, cookies, etc) and the
white flour-hydrogenated fat-salt foods (bisuits, crackers, chips etc.),
and also the expensive cheeses, ice cream, and other good tasting stuff.
Maybe these things are causing the cancer, but in the studies, they pick
the meat as the cause.
3. Maybe there is a problem with a high intake of red meat IN COMBINATION
with grains and the flour from them. Maybe high intake of red meat without
grains would be ok, and the high intake of grains without red meat would be ok.
