Kelsey,

  Invest in a slow cooker. Westbend has a great one. The oblong one with a base
unit that serves as a griddle would probably work out for you.

  You simply put your meat in, add a bit of liquid and turn it on.

  Lazy Man's Roast Beef

  3-5 pound Rump Roast
  1 Cup Red Wine
  2 tablespoons Brown Sugar
  1 teaspoon sage.

  Cook on low for 8 hours.

  Pork Tenderloin with Applesauce.

  3-5 pound pork Tenderloin, 1/2 cup of applesauce. Plunk the meat in the slow
cooker. Spread applesauce over it. Cook on low for 8 hours. Let rest for 10
minutes, then slice. You can freeze any left over slices on a cookie sheet,
then reheat in the microwave :)

  How's your dexterity. Can you manage knives? I use the Ergo electric knife
with extra utility blade. It has an easy-grip handle. I simply anchor what is
to be cut with a fork, and cut away - works great. The Ergo Can Opener is the
"walk around" the can variety and is really great. You don't have to hang on to
it while it opens the can; simply anchor can in place and press the lever and
it does the work. You should be able to find both of those at Canadian Tire.

  The Philips front load bread maker oven is also another handy gadget. It's
not only a bread maker, but also serves as a toaster, oven, and broiler. With a
little practice, you can use any of these items safely and easily.
