I called Gerber who said they put a D on the label because non-dairy
products may have been made on a line that had dairy on it.
Nabisco on the other hand said you should not look at their products
regarding the U/D etc-that is only for the Jewish population. If they put
dairy in a product it will be clearly marked in the ingredient list.

Kashrut involves procedure and supervision, both of which cost money.
Since the target demographic is relatively small (I would guess about 5
millions worldwide), a lot of companies just don't bother.
