            SWEET SOUR DOUGH

Lactobacillus bacteria is the stuff that sours sourdough. In
the process, these little guys also produce an enzyme that
breaks down a certain protein believed to be toxic to people
with celiac disease. Celiac disease is an inherited disorder
in which the small intestines are severely damaged by certain
wheat products. Nasty stuff, and the only treatment for the
disease is avoidance: a life-long, gluten-free diet. With the
newly discovered proteins isolated, researchers say they may
be able to create sourdough-related bread/cereal products that
do not adversely affect celiac patients
