i have read conflicting things about these..some say they are totally
interchangeable and others say not...i have read they can be substituted
for one another in equal amounts..and one of the books i have says use
half as much guar gum as xanthan gum called for in a recipe...also have
heard some say xanthan gum works better than guar gum...also there is
considerable price difference..xanthan gum is much more expensive..it
would seem if you use half as much guar gum-it would be the way to go if
they are interchangeable... id like to know opinions and facts you guys
may have on this...i have not tried xanthan gum and wonder if its why
some of my cakes and stuff dont turn out well by the way..i have just
started experimenting with almond flour and its AWESOME so far..and you
dont use any gums with it...just kind of pricey. any feedback would be
appreciated and i will summarize thanks donna clifton park ny
