Thanks to all who responded. You have provided a lot of good information
and ideas.

Vance's Darifree is a milk substitute that is dairy, corn, gluten and
soy free. If made thicker it can be used as a substitute for other
products.

Coconut milk was suggested by several as a substitute for evaporated or
sweetened condensed milk.

Fleishman's unsalted & light margarine in the tub, squeeze bottle and
unsalted stick margarine were mentioned by several.

Several suggested using a good quality olive oil with flavoring such as
garlic added for bread, vegs, etc.

Horizon margarine was mentioned as confirmed gluten-free, but I'm not
sure about dairy or soy free?

I Can't Believe its not Butter in the spray bottle only ; Spectrum
shortening available from Miss Robins

Mother's margarine and also Hadar can be found in a good Kosher store.
Also Passover Farm Rich makes a frozen coffee creamer and whipped
topping available only at passover time.

Nut butters were mentioned and a soft avocado spread for bread or potatoes.

A recipe to make your own rice milk. Take 1 cup warm cooked rice. Add 3
1/2 c. water. Blend at liquify until really pulverized. Let sit for 1/2
hour. Strain and cool. Can add vanilla or other things if you like.

And last but not least yogurt cheese was suggested. Apparently there is
a way to make yogurt destroying the lactose in the archives. Use a non-
flavored yogurt. Line a sieve with cheesecloth or a paper towel and
place over a bowl to collect the whey in the fridge overnight or until
the yogurt is as thick as you want it. Makes good lasagna, cheesecake,
etc.
