USES=========
Diana said pancakes work well with sorghum. She's tried donuts with a bit of
cornstarch. Plans to try more recipes. She said Twin Valley Mills suggests
using 2 tblsps. of corn starch per cup of sorghum flour as a thickener. Diana
likes the flavor much better than rice flour .
Amy says she uses sorghum for everything. She uses a mix of 3:1
sorghum:cornstarch <my mix ratio too>. Amy uses soy flour in some recipes.
The soy flour is from Iowa Soy Specialties (can't buy direct, but use a
search engine with "soy flour" to find Iowa Soy & their distributors. Amy's
family & non-GF friends really love the sorghum.
Sharon uses a combination of flours as below (was formulated by Bette
Hagman -- book entitled THE GLUTEN-FREE GOURMET BAKES BREAD). Sharon
made a coffee cake with the below mix and it was wonderful.
1/3 part sorghum flour
2/3 part garfava bean flour
1 part cornstarch
1 part tapioca flour
