It's interesting that he classifies nuts as high-carb foods.
They aren't, as a general thing. They're high-fat foods. For
example, a cup of walnuts is about 785 kcal. Of that, carbs
contribute about 34 kcal (roughly 8.5g of utilizable
carbohydrate). A calorically equivalent amount of beef liver
(about 20 ounces) would give you 29.4g of carbohydrate, or about
118 kcal. Even by weight, a cup of liver is higher in carbs, at
about 47 kcal worth.
