I have not had the virgin coconut oil go bad for me, though I have kept it
at room temperature for 6 months or more. In the summer, it is a liquid;
in the winter a solid (melts around 75 degrees). I've had other coconut oil
that I made into a salve and kept in a jar; 2 years later it had a distinct rancid
odor
so I threw it away. I'm sure it depends on the oil, the heat of your kitchen,
etc.,
but it should last a good long time.
