I have heard from several folks after my post about miso sometimes being
gf. One person said that the powdered soup mix she uses is gf and
labelled as such. Another person said that the "koji" or enzymes used
in fermenting miso are always or almost always from barley. I have two
containers of red miso in my fridge. One is old and needs to be tossed
anyway, and says nothing about ingredients. The other is gf, specifying
that the koji is derived from rice.
So it looks like we have another case of buyer beware-read the label and
call the manufacturer.
