I made cookies substituting corn starch for flour in exact amounts.  The
results are not 'bad' but are a bit crumbly and dry.

Does anyone have any suggestions on how to improve the results??

Would the addition of xanthum gum help them 'stick together"?  If so,
how much should be added.
