Hi Gourmet GF'ers!

Time for a tasty, nice whole-grain textured seasonal deliciousness.
Even non-gf'ers think this is wonderful.

Heat oven to 425.

Combine  1/4 c. bean flour (I use mung bean, but lentil is good, or
   chickpea, or a mixture of two or three--be creative)
1/4 c. rice flour
1/2 c. equal parts arrowroot (I don't eat corn, but cornstarch would do
   as well),
potato starch, and rice bran
1/2 tsp Xanthan gum
2 tsp baking powder (3 if the homemade kind)
1/4 tsp. salt

Put into a buttered square or round dish or pie plate.

Top with sliced fruit:  Plums (yums) peaches, etc, densely covering the
dough.

Here's the good part for those off sugar:

Sprinkle with cinnamon to taste and Stevia to taste, or sugar, if you
prefer.  Dot with bits of margarine or butter.

Bake for 25 minutes.

Try not to eat the whole thing at one sitting.

This is just like what Mom used to make, only you won't get sick from
eating it.  :  )
