The volume of vegetables and fruits changes when dried. So 6 pounds of
apples will now weigh 1 1/4 pounds and fill three (1 quart) bags. Water is
lost in drying. So, each portion will be more calorie and carb dense in a
dried state. Fruits, veggies, and meats all shrink (lose water) when dried.
Seven pounds of beefsteak will reduce to about 1 pound, and hence a much
smaller volume, when dried. All the calories and carbs are still there,
they're just contained in a smaller volume.
There are a lot of dehydrator books out there that can give you an idea of
how much a given food will shrink. Most don't list the calorie and carb
content, but you can find that elsewhere.
I suggest that you get a good calorie chart do look up numbers if you want
that kind of info. One good book is BOWES & CHRUG'S FOOD VALUES OF PORTIONS
COMMONLY USED by Jean A. Penningon.
