there was a summary about cheese in this past issue of Gluten Free Living;
 I am confused about which are the safe cheeses.  For example, they talked
about fresh parmigiana cheese and  said that Parmigiana reggiano is what I
interpreted  OK.  But , parmigiana reggiano refers to the area in italy
where it is from and I have seen many brands of Parm reggiano.  Does
anyone know if they are all OK?( is there something about the processing
of cheese in this area of Italy that enforces a certain recipe????)  or if
not,  does anyone know what brands of fresh Parm reggiano are OK?   Also,
i was curious about the same issue with other types of fresh cheeses such
as Mozzarella and cheddar?
