I have searched the archives and looked through Celiac.com and can not
really find an answer to my question.
I go for an endoscopy to check for CD on January 15. I have been
basically GF since May, when I found I was allergic through a blood
test. I have cheated here and there, but not too much. On December 20,
I went to my GI doctor to set up the endoscopy. I asked how much gluten
I need to eat before my test. He said to just eat like a normal person.
My question is, how much gluten do I need to consume daily prior to my
test? I read on Celiac.com that 2-3 grams of gluten a day is good for a
blood test. Is it the same with an endoscopy? Do I even need to be
consuming gluten at all? Is one piece of bread enough?
So, on Christmas, I started eating regular pie, sweet breads, etc. I
got extremely sick. I have been eating wheat every day since and
feeling ill all over. The first day my stomach was in knots. My
fingers are tingling, as soon as I consume gluten, my head starts to
pound, I am extremely bloated (I feel like a beached whale), my skin is
broke out, I'm anxious, and so on.
To make matters more complicated, I want to begin on a low carb diet to
lose the 4 pounds I gained over the holidays. I believe it's rather
hard to be low carb and eat wheat, too.
