I hope this is not off subject. I have had celiac for 14 years and have
followed the diet faithfully. I know I am not eating anything with gluten.
I have many other autoimmune illnesses, two of which cause severe pain
(Interstitial Cystitis and Fibromyalgia). Within the last year I have also
developed Type 1 Diabetes. I read about diabetics being helped after
following the gluten free diet yet I developed it after 13 years on the
diet. I spend my life and money trying to get my immune system in better
shape but it just seems to get worse.
I am not really sure what I am asking here but the posts about the Specific
Carbohydrate Diet have me puzzled. I tried it for awhile (not long enough
to tell for sure if it was helping). My biggest problem was I was eating a
lot of food that would make your cholesterol rise. I already am at high
risk for heart disease because of the diabetes, family history and I had a
blood test (homocysteine) that came back way off the charts. Should I try
the SCD again but plan ahead so this does not happen? I am not looking for
a "cure" for celiac but wondering if most of these problems started in the
gut.
I tried vegan for awhile but that just seemed to run down my B-12 and other
vitamins.
How do you know what is healthy? I feel like I am at a point where
everything I put in my mouth is questioned. Am I hurting myself by eating
meat or carbs, etc? Is this just rotten luck?
