Hello Everyone,
I would just like to say thank you to everyone who responded. There were
soooo many responses I couldn't respond to everyone. I just sent another
message asking advice on how to deal with her doctor but I'll just summarize
your responses and hopefully this will help someone else.
First many people said that they pack their child's lunches for school.
They notify everyone around them not to feed their child anything unless
it has been approved by the parent.
My favorite advice was that the mothers make a few batches of cupcakes and
pizzas for parties and things that come up at school so they can thaw them
and send them to school with their children.
Everyone suggested the book: "Kids with Celiac Disease" by Danna Korn.
Most people said that it was a must have book.
Another book that was recommended was "Special Diets for Special Kids"=

Everyone said that the younger the child is the easier it is for them to
adjust to the diet. Since I eat gluten free I already knew of all the great
food out there from wonderful websites.
