Hi Mary,

  ** Here are my reasons for staying away from pork:

  1) High levels of palmitic acid (16:0) and stearic acid (18:0);

  2) Unfavorable calcium to magnesium ratio;

  3) Low niacin

  Of course, an argument could possibly be made for the high amount of oleic
acid (18:1) in pork. Does it offset the effects of the palmitic and stearic
acids? In my opinion, the ratio of oleic to stearic and palmitic acids is
too low to compensate for the more damaging stearic and palmitic fatty
acids. So, this is why I lean toward my "no-pork" philosophy.
