** Olive oil is not as high in omega-3's as canola oil, but it is lower in
omega-6's than canola oil.  Further, olive oil is rich in antioxidants, and
has squalene which lowers HDL, thins the blood, and has anti-inflammatory
properties.  Olive oil also increases cellular uptake of omega-3's.

<<I can get unprocessed virgin canola oil made from organic rape seed,
but it tastes awful. I can take a spoon of it, it is ok that way, but
will spoil any dish I put it in :-(>>
