Was that figure for raw or cooked carrot?
Generally anything under 50 is fine for T2 diabetics, though YMMV
is mantra.

The fibre in carrots is soluble but not viscous.   Don't know whether
that is relevant to your desired outcomes.   For T2 diabetics there is
a definite advantage in having foods that form  gels.
