It is not weird!. the molecular structure of white flour being way more
simple than whole flour ,and cooking being a way to create new molecular
compounds ( sugars and proteins combining with each over) , it is giving way
less chance for the body to sort out the useless from the usefull and more
chance for the immune system to get triggered by those new complexes than
can reach the blood.
On top of that the phytates are eliminated from the white flour.
