I presume (particularly where hunting is made difficult) the lack of money causes a general "choice" for cheaper (mass produced - hormone packed etc.) cuts of meat. Also, breads and pastas are probably cheaper per stomachful leading to higher grain consumption as income gets lower.

Just a guess from a relative newbie..
