According to my Peterson's guide.....the tender leaves and tips
can be steamed and eaten any time....in the Fall the seeds are
collected for use as porridge or ground for flour...........
But be sure it is Lamb's Quarters....not Mexican Tea which
looks a lot like it, but smells of varnish and is not eaten.
Peterson's says nothing about the nutrient content.....
