That is very interesting in itself.
If (essentially) a vegan can develop heart disease to the point of needing surgery it tends to support the view that veganism isn't the "right" path for our bodies AND that meat eating isn't the biggest baddest thing we can possibly do to ourselves.
But, we already know that don't we! :)
It would be interesting to find out if Mr. Letterman's knowledge of the carbohydrate/insulin/cholesterol theories were learned by him in order to improve his lifestyle, or just so that he could be intentionally provocative.
(Dave Letterman... intentionally provocative.... nooooo!) :)
