For the first time in a LOOOONG time, I don't feel like a sick lady.  I
have suspected for a long time that I had a problem with wheat, but
until I knew for SURE why, I didn't take the GF diet very seriously.
But 2 1/2 weeks ago when I got the results of my EnteroLab gene test [
http://www.enterolab.com ] I knew that I have a strong predisposition to
celiac disease & that I had to get serious about converting GF.  (Sounds
like a religious, experience doesn't it?  LOL!)  I really did a cleaning
out of my pantry, questionable ingredients, & even stopped taking the
sacramental bread at church, etc. Plus, I knew that I was probably iron
deficient since I couldn't eat beef anymore so I started take iron
supplements.  I am now amazed at how much better my stomach is & how
much more energy I have.  Ahhhh......... knowledge & commitment are
powerful things. ~Valerie in Tacoma,WA  (Any out there who may have
solutions to the sacrament bread thing, I'd love to hear from you.)
