Thank-you for your responses, here's the information I received:

1.  Charcoal itself does not contain gluten.  Charcoal briquettes are
usually made with wheat flour as a binder.  Try using fireplace wood, it
makes the food taste better than charcal.

2.  Get solid charcoal, not the briquettes.  You can buy at a hardware store
 it may be expensive.

3.  Get hardwood charcoal at the grocery store, sometimes Wal-Mart has it.

4.  When the charcoal burns the original substance is chemically destroyed.

5.  Cooking with charcoal isn't safe regardless if it has wheat in it or
not.


I am going to go ahead and use my Kingsford.  I don't think the wheat that
it is bound with will get on my food via the smoke.  If I get sick I will
use pure charcoal as suggested or get a gas grill.  Thanks Janet
