Julia from Argentina asked what could be used in place of xanthan gum.
If you do not have xanthan gum for a recipe, you may substitute 2 tsp.
of unflavored gelatin (Knox) for each tsp. of xanthan gum called for in
a recipe.  Another substitution for xanthan gum is to stiffly beat an
egg white, then fold it into the cookie, cake or muffin mixture just
before baking.
