Several people responded that their inquiries on this subject in the past
revealed that there was currently no cost effective way for individuals to
test for gluten in foods. The following post gave the most detail and two
interesting links:

These are, basically, commercially available kits. Most hospital labs would
have the equipment but if you tried to set it up yourself it'd cost
$20-50,000 to outfit. Technician not included.
The first site also has a "screening" kit that works like a home pregnancy
test. It will only detect higher level contamination, not micrograms like
the "lab" kits.
