Speaking of potato alternatives - Philip, try celeriac.  It looks like a
mutant veggie from another planet, but once you trim off the ugly outer
peel, and cube the round root, its really great.  I roasted some with cut up
chicken yesterday, so it cooked with the chicken juices.  Everyone liked it,
and it didn't leave a heavy feeling.  I'm pretty sure its much lower in
carbs than a starchy tuber.  I don't see why you couldn't nuke it with your
chicken or pork dishes.
