It has been brought gracefully to my attention that, in my post about
enzymes et. al., I said that bread and pastas were "simple carbohydrates."
That is wrong. They are complex carbohydrates. But because breads and
pastas made of refined grains like white rice have had most of the fiber
removed in the processing, we do tend to convert that to sugar much more
rapidly than we would with unrefined flours etc.

I've also been informed that taking acidophilus or probiotics right after a
meal would not necessarily accomplish anything. It's necessary to maintain
a good balance before eating ingredients like sugars that may bother you.
In my case it may have worked because I was just coming off a round of
antibiotics and probably took a few pill before the first time I tried some
bread and/or sugar so some bacteria had already been restored. And the
instructions on the bottle were to take it right after eating. But last
word is that for me it worked, and if I've learned one thing, it is: If it
works don't fix it :) BTW, for what it's worth, when table sugar and maple
syrup was bothering me, I noticed that honey did not. So for that time I
had replaced the sugar and syrups with honey.  -vance
