Hi list mates. It's whine time for me! I'm rather frustrated to learn
that even though I have been GFCF for six months my gut problems seem to
be escalating steadily. Before I went GFCF my discomfort was focused on
my upper GI. As soon as I went GFCF, my gastric pain disappeared.
However, since going GFCF & getting into GF baking & such, my problems
are mostly lower GI. I've just about come to the depressing conclusion
that I have no business eating breads, beans, crackers, potatoes, etc. at
all. The more starchy foods I eat the more GI upset I experience. I
suppose the problem now is yeast overgrowth even though I use probiotics
every day. Yesterday I was so sick at work, I was barely functioning and
only narrowly escaped what could have been a MAJOR embarrassing incident.
[I'll spare you the graphic details. Use your imagination!] In order to
continue my part time job as a nurse, I've decided I need to take
drastic measures to get well -- the specific carbohydrate diet or perhaps
the paleo diet minus all dairy. That leaves me so few food choices I
can't imagine how I'm going to prepare meals for a family of 4 with 3 men
to feed, two of whom are GFCF as well. Any ideas & encouragement out
