Hi All--
I've been eating strictly gf since the first of March
and for the most part, I've had no problems; however,
eating gf bread seems to be causing a glitch.
I tried making my own, which became too expensive and
I didn't care for the taste. I went to Kinnikinnick
Italian White Tapioca and managed only marginally. The
symptoms I get on gf bread are mostly bloating and
feeling very full. Since I'm lactose intolerant and
think that I'm also sensitive to casein in milk, I
ordered the dairy-free bread from Kinnikinnick - still
seem to have a problem.
So, yesterday, I made the yeast-free Focacia (sp?)
bread in one of Carol Fenster's books - used Ener-G
flours (rice, tapicoa, potato starch), corn-free
baking powder, rice milk made from Better Than Milk
powder, no herbs or spices as suggested in the recipe,
and of course, no yeast. I *still* experienced the
bloating and full feeling.
I'm really stumped. I can eat one slice of
Kinnikinnick bread a day without too much discomfort,
but more than that and I don't do well.
Does anyone see something here that I may be missing?
If I eat meals of fresh meat, potatoes, vegetables and
fruit or gf desert such as Imagine Chocolate Pudding,
I'm fine. I don't eat much rice as a side dish because
I'm not that fond of it...is it possible I'm sensitive
to rice now? I'm also sensitive to corn and cantelope.
I was hoping the problem was simply a sensitivity to
yeast, but that doesn't seem to be it either.
Any and all suggestions and/or advice would be greatly
appreciated. I'll summarize if there's interest.
