Hi,

I originally re-checked out  this site, that I found a couple of years
ago, to see if it would suit the 9 year old who wants ideas for a
science fair project (my own 9 year old is in the throes of a science
fair project as well - I sympathise!); it says how to remove gluten from
wheat flour.

It also contains lots of information on bread ingredients and what they
do, so although it doesn't appear to cover gf bread specifically I
thought it may still be of  general interest, particularly to people who
bake their own bread. Here it is:
