I don't know if this was the story previously mentioned, but I read this
week in my copy of the "Autism Research Review International" put out by
Dr. Rimland of the Autism Research Institute that Dr. Alessio Fasano and
colleagues have identified the protein that is likely to be the reason
celiacs can't digest gluten, Zonulin, found in the intestines. It is
supposedly too prolific in the intestines of celiacs, and it allows
increased intestinal permeability and therefore the autoimmune reaction
to gluten to occur. They also think it may play a role in other
autoimmune diseases. They are trying to come up with a way to regulate
zonulin production, probably (and this is myinterpretation here) a
substance that would be like insulin to the diabetic. Let's hope they
are on to something :) Wouldn't it be great to be freed from an altered
lifestyle and only need a medication (not that the GF life is terrible,
jsut restricted). The reason this was reported in the ARRI is because
of a disproportionate number of autistics who also have celiac.
