Neither.

Kashrut is a religious thing - the dietary "laws" of Judaism (of which the dairy-related rules are just a small part).
Given the 12-13 million Jews worldwide estimation that I found on the web and guessing that less than half observe kashrut gave me the 5 million estimate.
