I soak my bacon in water overnight like Ray does. By taste, I would estimate
80% of the salt leeches out into the water. I don't have any proof but I
would estimate much of the nitrites also leech out into the water. The bacon
I buy is naturally hickory smoked which I believe would be considered paleo.
Also, as has been mentioned previously, pork has a higher proportion of
mono-saturated fat than other meats. I also cook it over low heat to
minimize damaging the fat. I can understand why you would not want to eat it
but I enjoy eating it and I digest it very well.

I meant nothing by this except I don't have the time right away to
research this. Priorities, you know? I'm not trying to convince anyone of
anything. Consider it a seed planted. It makes sense to me. When I get a
chance this week I'll look more deeply into it.
As far as the bacon goes, how about if I back up and just question the
nitrites, nitrates, and smoking, often artificial smoking? Is this not a
recipe for free radical damage? I'm only asking that someone tell me how in
the world bacon can be paleo.
