I wish I could remember the author's name, but there is a book called THE CHEESE BOOK that explains the processing of every kind of cheese. I just remembered my former roomate in colege showing the book to me and i found the information to be very useful and understand better now why people have allergic reactions to dairy. I don't know if it is still in print or not, but if not you could probably find it at Amazon or ebay. Sue
