my understanding is that it is one of the milk proteins. i found a bunch (well, some) info on it in my research on the possibility of a connection between bipolar disorder and casein intolerance. if you don't get more info from someone else on the list, let me know and i'll send you what i found. i'm at the office, and the info is on my computer at home.

What exactly is "casein"?  I am lactose intolerant but the gi doc never
mentioned anything about casein.
