I got alot of responses, here are some of the comments:
'Do you have Bette Hagman's book, The Gluten-Free Gourmet Bakes Bread? She
has a recipe for millet bread which turned out nicely for me. If you need
the recipe, let me know. I have several tricks for bread baking and I make
several of her recipes that I think are just great.'
'I have come up with a bread that is versatile enough to be either a
sandwich roll or focacia. I have not made it with millet flour though so
you will have to try and let me know how it works .
Here it is
Focacia Bread
2 cups GF flour ( I use GF Pantry french bread mix )
1 cup warm water
1 pkg GF yeast
2 eggs
2 TBSP olive oil
1/2 tsp salt
1/2 cup shredded mozzarella cheese
Sprinkle the yeast on top of the warm water and let sit aprox 10 min. till
the yeast dissolves . Combine flour and salt. Add room temperature eggs
and oil to yeast and water mix . Add wet ingrd. to dry and mix well , add
mozzarella ( and any thing else you want in the bread , black olives,
tomatoes ect ect .) If making focacia bread pour in the center of a
greased cookie sheet ( or on silpat), cover and let rise in a warm place .
If making rolls prepare english muffin rings on a cookie sheet greased ,
cover and let rise in a warm place ( aprox 45 min to 6o min) then bake at
375 for half hour till done . You can place things on top to make a pizza
type bread before baking. I find the mozzarella gives this bread the
moisture that is missing in many of our GF breads I bake this as sandwich
rolls slice and freeze delicious!!'
'isn't millet a no-no? I have read that the only safe grains are rice and
corn....have to check into this further.'

the millet in the bread.'
