For those of you that bake, there is an article in the Jan/Feb issue of
Cooking Light Magazine on rice flour and a recipe for Rice Cake that
looks fabulous . It states the rice cake is soft, dense and springy -
sort of like a sweet dumpling. The article on rice flour talks about
gluten and wheat allergies.
