I have been gluten-free (then wheat-free) since November 2000. Going GF
cleared up my intestinal symptoms within a few days. I later found that I do
not have celiac disease, but have wheat intolerance. My doctor said that I
should experiment to find out what I can eat. I tried one wheat-based muffin
in January and my symptoms returned for a day or so, thus confirming the fact
that my symptoms are related to injestion of wheat. I have not eaten wheat
since then, until last week when I ate corn bread (with wheat flour as an
ingredient). I have been eating one piece a day for the last few days, and I
have not had any symptoms. I suspect that I'll find that I can eat small
amounts without a problem now that my system has healed. My question is the
following... Does anybody know if one can begin eating wheat again after a
period of being off of it? If other people have experiences with wheat
intolerance I would very much like to hear them.
