I'm on a challenge sort of (ouch). I have been largely excluding gluten
from my diet for years, although not intentionally targeting gluten, just
trying to get through the days and it's just worked out that way. Now I am
trying to increase my consumption for celiac testing. I started this about
six weeks ago and not doing too well at it (hey, should I stuff my mouth
with this stuff that makes me crook? It's not easy)
Anyway, I've got a problem - I'm putting on weight! And I don't like this
one little bit, I'm starting to feel "blobby". If I go for flour, breads,
pasta, it all seems to demand fat additives in order to be palatable. And
they are high cal even without the fat. Other things like crackers have the
fat already in them and cereals have loads of sugar. Beer is going down
very well . . . don't mind that too much!
You are the experts on gluten containing foods. Any ideas on how I can get
lots of gluten in my system in a healthy way and with minimal calories? And
preferably without too much bulk.
